Those are called Siu Mei in Cantonese (Shao Wei in Mandarin). Siu Mei can be categorized as barbequed or rotisserie for Western understanding. It is crispy on the outside but juicy on the inside. Siu Mei is a very traditional type of food in Chinese culture and it is originated in Cantonese cuisine. In the old times Siu Mei was only brought home for dinner during special occasions and holidays for celebration. Now it has become very common in a Chinese populated area. You can find Siu Mei in numerous places such as Chinese restaurants as well as Chinese supermarkets. There are different types of Siu Mei including Cha Siu (roast pork), Siu Ngo (roast goose), and Siu Ngaap (roast duck) etc.

The traditional way to make Siu Mei requires a bulky, special equipment and the Siu Mei is hung while cooking in the equipment with high tempurature. Why is it hung? So that the heat can penetrate and evenly circulate all around the Siu Mei that’s cooking. And the oil would drip down instead of being soaked in the Siu Mei. That is how the crispy effect is done. After I have tested different methods, Now I'm going to introduce to you about how to make Siu Mei without using the traditional equipment in order to make it easier and more convinient.....
